Mashed Maple Squash

In the winter, I always fall for those comfort foods, usually full of lots of calories.  This December we’re going to share with you some new forms of comfort food, with a lot less fat and calories, but just as much flavor!

This delicious side-dish has about 160 calories, 2 grams of fat and 3 grams of fiber (as you can tell, I’m a WW person, so I only pay attention to those three, sorry!)

Mashed Maple Squash

Ingredients

  • 1 acorn squash, (1 1/4 pounds), halved and seeded
  • 2 tablespoons pure maple syrup
  • 1 teaspoon butter
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Preparation

  1. Preheat oven to 400°F. Coat a 9-by-13-inch baking pan with cooking spray.
  2. Place squash halves cut-side down in the prepared pan. Bake until soft, about 50 minutes. Let cool for 10 minutes.
  3. Scrape the soft squash flesh into a medium bowl. Stir in syrup, butter, cinnamon and salt with a fork, mashing the squash until somewhat smooth.

2 servings, 2/3 cup each
Make it complete with a breaded friend chicken breast, or, add it to turkey meatloaf as a variation on regular mashed potatoes!
